My Partner’s mum showed me this recipe, it's great as a fresh dip with samosa, pakora's or on top of a curry dish mixed with yoghurt, keeps nicely in an airtight container for a week.

Ingredients

  • 2 Medium Sized Tomatoes

  • 5cm Piece of Ginger

  • 2 Cloves of Fresh Garlic

  • 4-5 Red or Green Birds Eye Chillis (add more or less depending on your spice level)

  • 1 Bunch of Fresh Coriander

  • 1/2 tsp of salt

  • Plain Yoghurt

Method

Garlic and Ginger

Peel and roughly slice the garlic and ginger

Remove chilli stalks

Remove chilli stalks and roughly chop

Chop the tomatoes

Roughly chop the tomatoes into quarters

chop the coriander

rip or roughly chop the coriander
rip or roughly chop the coriander

Add all the ingredients

add all the ingredients to the blender including the salt

Blend

blend until smooth

Add salt

add more salt to desired taste

Enjoy

mix desired amount with Yoghurt and enjoy!
