Ingredients: 500g Lean lamb mince; 1 ½ Red onions, quartered; 4 Green chillies; 25g Fresh coriander (cilantro); 1 tbsp Olive oil (plus extra for the tray); 1 tbsp Garam masala; 1 tsp Chilli powder; ½ tbsp Cumin seeds (toasted & crushed); ½ tbsp Coriander seeds (toasted & crushed); 1 ½ Red onions, finely diced (for masala); 4 Green chillies, finely chopped (for masala); 5 Medium tomatoes, halved; 2 cloves Garlic, minced (or 2 frozen cubes); 1 inch Fresh ginger, minced (or 2 frozen cubes); 1 tsp Chilli powder (masala); 1 tsp Turmeric; 1 tsp Garam masala (masala); 25g Fresh coriander, roughly chopped (for garnish); Sea salt and cracked black pepper to taste
