Ingredients
- 4 whole chicken breasts
- half a cup of cornflour
- 3 tablespoons of water
- 4 egg yolks
- salt, pepper
- 6 shallots
- oil for deep-frying
- For the Sauce
- half a cup of lemon juice
- 2 chicken stock cubes
- 2 tablespoons of corn flour
- 2 tablespoons of honey
- 2 and a half tablespoons of brown sugar
- 1 teaspoon of grated green ginger
- 1 3/4 cups of water
Method
Prep the Chicken
Carefully remove the skin from chicken breasts. With a sharp knife remove chicken breasts from the bone, giving eight individual pieces. Pound chicken breasts out lightly.
Prep the batter
Put the cornflour into a bowl, gradually add water and lightly beaten egg yolks, add salt and pepper, and mix well.
Dip the Chicken
Dip chicken breasts into this batter, drain well.
Fry the Chicken
Put a few pieces of chicken into deep hot oil, fry until lightly golden brown and cooked through. Drain on absorbent paper. Keep warm while cooking the remaining chicken.
Slice the Chicken
Slice each cooked chicken breast across into three or four pieces. Arrange on a serving plate, sprinkle with chopped shallots, and spoon hot sauce over.
Sauce
Combine lemon juice, crumbled stock cubes, corn flour, honey, brown sugar, ginger and water in a saucepan, stir over low heat until sauce boils and thickens.
Combine the lemon sauce with the fried chicken
Combine the lemon sauce with the fried chicken and serve with Noodles or egg-fried rice.
